Fruit Salads





 

HOLIDAY AMBROSIA

  • 3 oranges
  • 2 apples
  • 2-3 bananas
  • 1 handful green, seedless grapes
  • 1/4 c maraschino cherries, drained
  • 3/4 c grated coconut
  • 1/2 c broken pecans

Wash all fruit. Peel and seed oranges and cut into
chunks. Do not peel apples but remove core and
dice. Peel bananas, slice into rounds and add to
fruit mixture. Add whole grapes, drained cherries,
coconut and nuts. Stir to mix. Cover and refrigerate.
The fruit will make it's own juice but if you will be
using immediately, you may desire to add a bit of
orange juice or Sunny D to create moisture.


This is also good with the addition of kiwi slices,
grapefruit chunks or any other fruit you like.

    This fruit salad is super anytime of the
    year but it has always been a regular
    offering at our Thanksgiving and
    Christmas Holiday gatherings.

REUNION POTATO SALAD

  • 5 lbs potatoes
  • 6-8 large eggs
  • 6 oz dill relish
  • 1/2 c green salad olives, cut
  • 1 whole medium onion, chopped
  • mayonnaise to taste and desired consistency
  • 2 Tbsp yellow mustard
  • 1-2 Tbsp Seasoning Salt, to taste
  • Paprika, for garnish

     Peel, wash and cut potatoes into 1/2" - 3/4" cubes.
     Wash eggs thoroughly and put cut potatoes and
     eggs into a large kettle. Add lightly salted water to
     cover all and cook until just done. Do not overcook.

     Drain potatoes and eggs and set potatoes aside to
     cool. Place boiled eggs in cold water to cool.
     Cut up eggs and add to cooled potatoes along
     with all remaining ingredients except paprika.

     Place salad in a large bowl, lined with
     crisp lettuce leaves. Garnish with paprika.

MARINATED CUCUMBERS

  • 2 Large Cucumbers
  • 1/2 cup Sour Cream
  • 2 Tbsp Vinegar
  • 1 1/2 Tbsp Sugar
  • 3/4 tsp Salt


     Wash and slice cucumbers into rounds.
     Soak in two teaspoons of salt and
     water for 30 minutes. Squeeze cucumbers
     in a towel to remove salt and water.

     While cucumbers are soaking, blend all
     ingredients until smooth.

     Add cucumbers to the mix. Refrigerate.
